First off, let me say I'm a Cheesehead through and through. Proud of it too!
Growing up in Wisconsin it's a fact of life that cheese is served with, well, EVERYTHING! There's hardly a recipe made in the entire state that doesn't have cheese, butter, milk or cream.
So it was a very sad day when I finally had to face facts and admit my stomach issues weren't a physical problem but a dietary one. Yup, the foods that once gave me comfort in good times and bad were now treating me like I was a Bears fan at Lambeau Field.
Besides my own gastrointestinal well-being I have a beautiful and vivacious incentive to create dairy-free recipes, my niece Rosie. She was diagnosed as lactose-intolerant shortly after her third birthday. Right after that my sister started asking for Rosie-friendly recipes the rest of her milk-loving family would think are tasty. That was the main reason for starting this website.
Please comment on recipes you like and if you didn't like something, let me know what you would do to modify it. Cooking is a matter of personal taste and I understand what I like you may not and vice versa.
Having given up dairy products I'm now asked if I still consider myself a cheesehead. All I can say is I'll be one until the day I die, albeit a dairy-free one from now on.
