Didn't you learn in college that you shouldn't let good beer go to waste? So this morning I turned a half-full bottle of Spotted Cow beer I hadn't finished last night into pancakes this morning.
I know it sounds odd to add this to pancakes but the beer flavor turned out to be very mild. It's one of those things someone who didn't know what they were eating would wonder what it was but couldn't quite place.
An added bonus was the carbonation made the pancakes very light and fluffy, and who doesn't like extra-fluffy pancakes?
Spotted Cow Beer Pancakes
4 ounces (3/4 cup) all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon kosher salt
4 fluid ounces (1/2 cup) beer
1 large egg
2 tablespoons vegetable oil
1 teaspoon grated lemon zest

In a medium-size bowl, whisk together first 4 ingredients; set aside.
In another bowl, whisk together beer and next 3 ingredients. Add to flour mixture and stir just until combined.
Heat griddle or skillet over medium-high heat; spray with cooking spray and spoon 1/3 cup batter onto griddle. Cook until bubbles start to form on surface of pancakes, 2 to 3 minutes. Gently flip and continue cooking until cooked through, about 2 more minutes.
Cooked pancakes may be kept warm in a low oven (about 200 degrees F) until all batter is prepared.
Serves 2.

Awesome recipe, James! I love the idea of spotted cows as an emblem for artisanal beers and other fun things. It would be so cool if you could use a Striped Zebra [fill in name of your preferred ingredient here] in your next recipe!
