Cast Iron Pecan Blondies
1/3 cup all-purpose flour
1/3 cup whole wheat flour
1/4 cup packed brown sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1 egg
1/4 cup canola oil
2 tablespoons honey
1 teaspoon vanilla extract
1/2 cup toasted chopped pecans
In a small bowl, combine the first five ingredients. In another bowl, whisk the egg, oil, honey and vanilla. Stir into dry ingredients just until combined. Stir in toasted pecans. Spread into an 8-in. greased cast iron skillet.
Bake at 350° for 18-20 minutes or until a toothpick inserted near the center comes out clean.
