Imagine eating something so good your eyes roll back in your head and you can't help but sigh. It happens to me every time I make this sauce.
Although it's fantastic served warm over dairy-free ice cream or pound cake, the way I eat most of it is by the spoonful straight from the refrigerator.
Chocolate Sauce So Good You'll Eat It With A Spoon
2/3 cup water
1/3 cup brewed coffee
1/2 cup (4 fluid ounces) sugar
1/2 cup (4 fluid ounces) light corn syrup
3/4 cup (3 ounces) unsweetened cocoa powder
1 (12 ounce) bag dairy-free bittersweet or semisweet chocolate chips
1 tablespoon bourbon or brandy
In a saucepan, whisk together first five ingredients over medium-high heat. Once mixture just starts to simmer, remove from heat and add chocolate chips and bourbon. Make sure all chips are submerged and let stand 5 minutes. Whisk until smooth.
Refrigerate leftovers for up to two weeks. Reheat over low heat or in a microwave on medium power.
