Frittatas are what I usually make when I have a bunch of leftovers. For example, today I was cleaning out the fridge found a half bag of hash brown potatoes, some leftover ham and a jar of fire-roasted salsa a friend brought over on Saturday. I added a can of diced green chilies and used the salsa as a topping and had a great lunch.
You really don't even need a recipe. Just heat up about 3 cups of leftover meat and/or veggies, add 4 beaten eggs, a few spices and you're all set.
So, what kind of frittata can you make from your leftovers?
2 cups frozen cubed hash brown potatoes
1 cup diced smoked ham
1/2 to 1 (4-ounce) can diced green chilies
1/2 teaspoon cumin
1/2 teaspoon freshly ground black pepper
4 large eggs (or 1 cup egg substitute)
1 tablespoon soy sauce
2 cups salsa, preferably fire-roasted
In a well-seasoned cast-iron or nonstick skillet, prepare potatoes according to package directions. Reduce heat to medium and stir in ham, cumin and pepper; cook 2 to 3 minutes or until heated through.
Whisk together eggs, chilies and soy sauce. Pour over potato mixture and gently stir with a spatula about 2 minutes. When eggs are about 2/3 cooked spread mixture evenly in pan. Reduce heat to medium-low and cook, covered, 3 to 5 minutes or until eggs are set.
Remove from pan and serve hot or at room temperature with salsa.
Serves 4 to 6
I've got some leftover brisket, roasted potatoes and grilled corn on the cob. Think that would work?
